How manufacturers and retailers can maintain the safety of food products in conditions of military aggression

Mass missile attacks on civilian critical infrastructure (thermal power plants, substations, energy facilities) carried out by our enemy in recent days have their consequences. According to preliminary calculations, about 30% of the country’s energy infrastructure has been damaged, and considerable financial, human and time resources are needed to restore it.

To date, the country’s energy system is operating in an emergency mode, some regions have been transferred to a planned schedule of power outages, but in some regions such outages are not yet planned. This problem affects all areas of the country’s livelihood, including the quality and safety of food products, and therefore, predicting, planning and ensuring their quality is a challenge that we must also overcome. Food manufacturers, catering establishments, supermarkets and retail chains faced it.

Three large groups of factors make the product dangerous: biological, chemical and physical.

Biological – pathogenic microorganisms that multiply uncontrollably in the absence of the proper temperature regime of the product and can cause harm to the consumer;

Chemical – chemical compounds can get into the products in the absence of nutrition at the food enterprise, allergens, food additives, flavor enhancers, salts of heavy metals, antibiotics, etc.

Physical – extraneous objects that can get into the food product in the absence of power sources of the enterprise.

First: energy independence of enterprises. It is possible due to the use of renewable energy sources (sun, wind, hydropower, natural thermal energy, biofuel) and the installation of backup generators. This will allow not only to ensure energy autonomy, but also to reduce the impact on the environment, to stabilize the cost component of the formation of product competitiveness due to the optimization of the cost of energy, and most importantly – to preserve the safety of food products in conditions of military aggression.

The second: the production of products that are less dependent on temperature conditions. In particular, certain groups of food products may be subject to preservation or sterilization with the use of food additives.

Third: reasonable extension of deadlines due to the introduction of new technologies in production processes.

Fourth: research on the quality of food products by accredited laboratories. This will allow you to avoid additional risks and control the quality and safety of food products.

Fifth: safe disposal of unfit for consumption food products at specialized enterprises. The sphere of production and sale of food products, public catering enterprises are invariably associated with the accumulation of food waste, non-liquid products and products with an expired sales period. It is forbidden to throw such waste into the garbage, they are subject to disposal by specialized enterprises. This will avoid additional risks and prevent outbreaks of infectious diseases among the population.
